1½ lb flank steak (or use skirt steak)
¾ tsp salt, divided
¾ tsp pepper, divided
⅓ cup nonfat buttermilk
3 Tbsp freshly grated Parmesan cheese
2 Tbsp reduced-fat mayonnaise
1 Tbsp prepared horseradish
2 tsp lemon juice
1 clove garlic, minced
6 Tbsp chopped fresh flat-leaf parsley
Preheat broiler. Place steak on a lightly greased large rimmed baking sheet. Sprinkle with ½ tsp each salt and pepper.
Broil 8 minutes or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
Combine buttermilk, cheese, mayonnaise, horseradish, lemon juice, garlic, and ¼ tsp each salt and pepper. Spoon sauce over steak, and sprinkle with parsley.
